Zojirushi BBCCX20 bread machineĀ and a recipe
We have had the Zojirushi BBCCX20 for three months now. We could not be happier with the machine. It turns out wonderful bread and it is very consistent.
When selecting the bread maker I read all the reviews I could find. Since there are only two of us I troubled over how large a bread maker we should buy. The BBCCX20 is the largest. We chose it even there are only two of us in the household. It turns out that a loaf stays fresh for a week in one of the plastic bread holders that Amazon sells. The bread here in Washington starts to mold after 9 or 10 days.
We have tried many different bread recipes. All were good but the one we have settled on is listed below. It turns out a loaf that makes great sandwiches and makes great toast. You can thick slice it and it makes wonderful cinnamon french bread.
1-2/3 cups Water
3-1/2 cups Flour (fresh but cheapest you can buy)
1 cup Whole wheat flour
4 tbsp Sugar
2 tbsp Dry Milk
3 tsp Salt
3 tbsp Butter
1-2/3 tsp Bread Machine Yeast (from jar)
For our location this recipe makes a loaf that just rises above the top of the pan yet does not reach the lid of the bread maker. We set the machine on white loaf and light crust with a normal bake cycle.
I have learned that the dough should form a smooth ball toward the end of the mix cycle. If it doesn’t and has bumps sticking out of it add a little water. When touched the dough should be sticky. Judging the correct amount of water to put in a recipe is the most difficult part of making good bread. I don’t know that we have ever found a recipe that called for the correct amount of liquid to make a loaf that looks good.
When we first got the bread machine the first two loves did not rise properly. Buying fresh flour and yeast solved that problem.
Since we purchased the Zojirushi we have made all of the bread we use. We have not purchased a single loaf. I strongly recommend this machine. It is well worth the cost.

Couldn’t be more pleased
After more than 25 years our old bread maker died and we didn’t have a clue on which machine to buy. After much research we decided on the Zojirushi BBCC X20 and we couldn’t be happier. We use the pumpernickel recipe for our everyday bread (included in the book that came with the bread maker) and we also use the Whole Wheat recipe for our pizza dough. The pumpernickel recipe is fantastic by the way.
The machine is very well built and easy to clean. The digital menu is very easy to see and easy to use too. The single paddle on our old Hibachi was a bear to remove and clean but the dual paddles on the Zojirushi are very easy to remove. It is also much quieter than our old bread maker. We use the bread maker no less than 5 times a week and have never had a problem with it. I highly recommend this to anyone considering buying a bread maker.
